  • Apple Cider Pulled Pork

    Cook in slow cooker

    3.5 lb. pork shoulder
    1 small white onion
    1 cup apple cider
    1/4 cup apple cide vinegar
    1/4 cup brown sugar
    2 Tsp. ground cummin
    2 Tsp. kosher salt
    1 Tsp. black pepper
    1 bay leaf

    Place half of onion in slow cooker. Set port on top of onions. Cover pork with remaining onions. In a seperate bowl, whisk together all remaining ingredients. Pour on top of pork and onions.

    Cook on low for 6-8 hrs. Or until pork is cooked and pulls apart easily w fork. Shred pork using two forks, then toss once more in juices so that it is coated.

    Serve warm, serves 6-8.

  • Slow Cooker Beef Ribs

    Slow Cooker Beef Ribs

    cook in crock pot

    2 tsp olive oil
    2 tsp salt
    4 lbs beef ribs
    1/2 tsp pepper
    3 cups onion, sliced
    1/2 cup water
    1 bottle favorite rib sauce

    set pan over medium heat. sprinkle meat with salt and brown on all sides. season with pepper. remove and add meat to slow cooker. add oil and sauté onions until transparent (2 minutes). add to slow cooker. swirl water in pan to get juices and add to cooker.

    cover crock pot and cook on low heat 8-10 hrs (usually 8 hrs). Keep an eye on pot and add more water as necessary to keep meat moist. In last 1/2 hour, add rib sauce.

    serve immediately. serves 4.

    NOTE: another way to serve is to not add rib sauce. But, remove ribs and add 1 cup sour cream and 1 cup cooked mushrooms to juices in pot. mix well and pour over ribs.

    8 oz cream cheese
    1 can chicken (drain water)
    1 can water chestnuts – chopped (drain water)
    6 oz miracle whip
    1 dry pkg Knors Veg Mix (smashed)

    soften cream cheese and mix. Add miracle whip and mix together. In a separate bowl, add chicken and shred. Add veg mix and stir. Combine both bowls and mix. Add water chestnuts and mix.

    Put your rice on in a rice cooker first

    Chicken:
    1 1/2-2 lbs chicken breast, cut into 1″ cubes
    dip in milk
    Roll in flour, fry in deep fryer

    Sauce:
    mix the following, then set aside
    2 tablespoons brown sugar
    1/4 cup sugar
    1 tablespoon soy sauce
    1 tablespoon rice wine vinegar
    2 tablespoons honey
    2 tablespoons chili garlic sauce
    1/2 cup pineapple juice

    In a Skillet:
    Heat up oil.
    add 2 cloves garlic, crushed, cook alittle, do not burn.
    add 1/4 to 1/2 teaspoon red pepper flakes, cook a little.
    add 2 teaspoons grated fresh ginger root, cook a little.
    add 1/2 onion, cut into chunks.

    When onion soft and clear:
    add 1 cut up green bell pepper
    add 1 cut up red bell pepper, or mixed sweet peppers
    add 1 1/2 – 2 cups pineapple chunks (20 oz, or 20 oz tidbits. Juice is used in the sauce above)
    add the sauce from above
    cook sauce down until thick, stirring often
    add fried chicken above to coat with sauce

  • Texas Chili

    Crock Pot

    1 lb sirloin (or ground beef)
    1 small onion, diced
    1 small green pepper, diced
    1 small jalapeno, finely chopped (no seeds)
    1 (14 ounce) can tomatoes
    2 (8 ounce) cans tomato sauce
    1 Tbl cumin (optional)
    2 Tbl chili powder
    1 teaspoon salt
    1/2 tsp cayenne pepper (optional)
    1/2 tsp (smoked) paprika
    1 (14 ounce) can red beans
    1 (14 ounce) can black beans
    1 cup water

    Salt meat and brown in skillet. Cut meat into cubes. Drain excess
    grease and add to crock pot. Drain and rinse beans. Add all remaining
    ingredients to crock pot. Cook on low for 6+ hours. Stir occassionally.

    Serve with toppings.

    Serves 6

    STOVETOP DIRECTIONS:

    Cook ground meat with onions, peppers, and jalapeno’s in a large pot.
    Add tomatoes, seasonings, and water, bring to a boil. Reduce heat and
    add beans, cover and simmer 1-2 hours.

    1 lb ground beef
    1 Tbsp chili powder
    1 can red beans
    1 tsp salt
    1/4 tsp black pepper
    2 Tbsp dried parsley (1/2 cup fresh)
    1 cup water
    1 pint salsa

    Optional:
    1 small jalapeno w/ seeds removed
    or 1/4 tsp chipotle chili power
    or 1/2 tsp red pepper flakes

    Brown meat in pan and drain juices. Fine chop jalapeno. Add can of red beans. Add all ingredients to crock pot. Cook 4 hr on low to blend flavors. Stir occasionally. Add more water as needed.

    Serve with fine cut onions and shredded cheddar cheese on top.

    Quick salsa recipe

    1 can pealed tomatoes
    8 oz can tomato sauce
    1 small onion
    1 small green pepper
    4 small green chilies (or 1 4oz can)

    Place all ingredients in blender for 5 seconds
