    Texas Chili

    Crock Pot

    1 lb sirloin (or ground beef)
    1 small onion, diced
    1 small green pepper, diced
    1 small jalapeno, finely chopped (no seeds)
    1 (14 ounce) can tomatoes
    2 (8 ounce) cans tomato sauce
    1 Tbl cumin (optional)
    2 Tbl chili powder
    1 teaspoon salt
    1/2 tsp cayenne pepper (optional)
    1/2 tsp (smoked) paprika
    1 (14 ounce) can red beans
    1 (14 ounce) can black beans
    1 cup water

    Salt meat and brown in skillet. Cut meat into cubes. Drain excess
    grease and add to crock pot. Drain and rinse beans. Add all remaining
    ingredients to crock pot. Cook on low for 6+ hours. Stir occassionally.

    Serve with toppings.

    Serves 6

    STOVETOP DIRECTIONS:

    Cook ground meat with onions, peppers, and jalapeno’s in a large pot.
    Add tomatoes, seasonings, and water, bring to a boil. Reduce heat and
    add beans, cover and simmer 1-2 hours.

    1 lb ground beef
    1 Tbsp chili powder
    1 can red beans
    1 tsp salt
    1/4 tsp black pepper
    2 Tbsp dried parsley (1/2 cup fresh)
    1 cup water
    1 pint salsa

    Optional:
    1 small jalapeno w/ seeds removed
    or 1/4 tsp chipotle chili power
    or 1/2 tsp red pepper flakes

    Brown meat in pan and drain juices. Fine chop jalapeno. Add can of red beans. Add all ingredients to crock pot. Cook 4 hr on low to blend flavors. Stir occasionally. Add more water as needed.

    Serve with fine cut onions and shredded cheddar cheese on top.

    Quick salsa recipe

    1 can pealed tomatoes
    8 oz can tomato sauce
    1 small onion
    1 small green pepper
    4 small green chilies (or 1 4oz can)

    Place all ingredients in blender for 5 seconds

    2 lb ground beef
    1 tsp chili power
    1 Tbl Salt
    1/2 tsp cinnamon
    2 onions, finely chopped
    1 1/2 tsp ground cummin
    3 bay leaves
    1 tsp black pepper
    5 japanese peppers
    3 small cans tomato sauce
    2 or 3 small cans water

    Cook ground beef. Put meat thru grinder with onions. Cook for 1
    hour. STIR OFTEN.

    Serve over spagetti, add more fine chopped onions, and finely
    schredded mild chedder cheese on top for a 4-way.

    Servers 6.

  • Sweet Potato Rolls

    Sweet Potato Rolls

    1/2 cup warm water (105F-115F)
    2 Tbl sugar
    1 pkg active dry yeast
    1/2 cup mashed & cooked sweet potatoes
    2 eggs
    1 Tbl butter, softened
    1 Tsp salt
    2 cups whole wheat flour
    1-1 1/3 cup all purpose flour
    1-2 Tbl butter, melted

    In a large bowl, mix warm water, 1 table spoon of sugar and yeast. Let stand 5 minutes, using wooden spoon, stir in remaining sugar, sweet potato, eggs, butter, and salt. Gradually stir in whole wheat and as much all-purpose flour as you can.

    Turn out on lightly floured surface. Knead in enough remaining flour to make moderately stiff dough that is smooth and elastic (6-8 min). Shape into ball. Place in greased bowl; turn once to grease surface. Cover, let rise in warm place until double in size. (` 1 hr).

    Punch down, turn on lightly floured surface. Cover let rest 10 minutes. Lightly grease 13×9 baking pan. Shape into 16 balls, place in pan. Cover and let rise in warm place until double (~45 min).

    Bake at 375F oven for 20 minutes until golden. Brush w butter. Serve warm.

  • Grandma’s Yeast Rolls

    Grandma’s Yeast Rolls

    1 pkg dry yeast
    1/4 cup warm water
    1 cup scalded milk
    1/4 cup sugar
    1/4 cup margarine (or shorting)
    1 tsp salt
    3 1/2 cup flour
    1 egg

    Disolve yeast in water. Combine milk, sugar, shorting, & salt seperately. Cool to lukewarm. Add 1 cup flour, beat well. Beat in yeast and egg. Gradually add remaining flour to form soft dough. Beat well. Cover and let rise in warm place till double in size (1.5 to 2 hr). Turn out on floured surface & cut. Let rise additional 1/2 hr.

    Place on greased pan & bake at 375 for 20 minutes.
